Ingredients

Chicken 1 kg
Green chilies 8
Tomatoes slice 1/2 kg
Oil 3/4 cup
Ginger garlic paste 1 tbsp
Black pepper 1/2 tsp
Salt 1 1/2 tsp
Cumin, crushed & heaped 1 1/2 tsp

Method

1. Heat oil, add chicken and fry for ten minutes.
2. Add ginger garlic paste and slices of tomatoes, cover and cook for ten minutes.
3. Then add salt, green chilies, roasted crushed cumin and black pepper.
4. Cook over high flame till chicken is tender and oil comes on top.
5. Shanwari karahi is ready for serve.

Chicken mince 1/2 kg

Wooster sauce 1 tbsp
Oregano powder 1/2 tsp
Egg, beaten 1
Bread, sliced 1
Milk 1/4 cup

For Batter

Flour 3 tbsp
Water as required
Corn flour 1 tbsp
Baking powder 1 tsp
Salt 1/2 tsp
Black pepper 1/2 tsp
Dry self raising flour to coat as required

Method

1. Add chicken mince, ginger garlic paste, salt, black pepper, Wooster sauce, oregano powder, beaten egg, bread sliced and milk.
2. Mix all well and make in the shape of thin patties (big kebabs) dip in prepared batter.
3. Then roll in dry self raising flour, freeze till required.
4. Finally shallow fry.

For Batter

1. In a bowl mix together flour, corn flour, baking powder, salt, Black pepper and make into thick batter with water.

Tips

Dry Self Raising flour, 1 cup plain flour, baking powder and 1/2 tsp salt combine these ingredients and store in tightly covered jar.

Chicken drumsticks 8
Mint leaves 12
Green chillies 15
Yogurt 1 cup
Oil 1/4 cup
Coriander leaves 3 tbsp
Cumin Powder, crushed 1 tsp
Mango pickle 1 tsp
Black salt 1/4 tsp
Dry fenugreek leaves 1/4 tsp
Ginger garlic paste, heaped 1 tbsp
Cream 4 tbsp
Coriander powder 1 1/2 tsp

Method

1. Grind together green chillies, ginger garlic paste, mint leaves and coriander leaves into a fine paste.
2. Marinate 8 drumsticks in this paste, also add in cream, coriander powder, cumin powder, black salt, dry fenugreek leaves and mango pickle.
3. Leave it for at least 4 hours.
4. Bar B.Q or bake for 45 minutes till they are done, take a pan put chicken drumsticks with a burning coal, drop oil on coal and cover the pan for one minute.
5. Serve hot with slices of lemon, onion rings and mint leaves.
